Looking to have a deeper connection with the meat you eat while getting the greatest value by buying in bulk? We offer the option to reserve a whole animal or half/side of one of our Idaho Pasture Pigs. You’ll get to submit your own custom cut list to our butcher and receive your meat portioned the way you like it. Want more shoulder roast, or more sausage? More ribs, or more chops? It’s a little more hands-on than shopping retail, but you’ll get the highest quality farm direct pork tailored to your tastes and cooking preferences. And save big.

Reserve your Whole or Half Hog with a deposit to our farm now, submit your cut instructions to our butcher and make your final payments at harvest time, and pick up your custom processed order at 4-Star Meat Co. in packages ready for your freezer.

How much pork should you expect?

Our target ‘hanging weight’ for our pastured pigs is around 200 pounds. That will typically yield 150-165 ‘dressed’ pounds of trimmed and wrapped meat depending on your preference for boneless or bone-in cuts.

Plan to have 1 cubic foot of freezer space for every 15 pounds of pork. A small 7 cu ft freezer works great for a whole pig with extra room for chickens and fruit and veggie preserves, and half a hog will fit in a standard freezer compartment.

Your haul from the butcher will vary according to animal weight and your choices, but a sample take home from a Half Hog from might be:

10 lbs Chops
1.5 lbs Spare Ribs and Pork Loin
7 lbs Bacon or Fresh Pork Belly
15 lbs Ground Pork or Sausage
12 lbs Ham
16 lbs Shoulder Roasts

5 lbs Stew Bones and Hocks

Pricing

You’ll make payments to both the farm and the butcher based on the hanging weight of the animal. Here’s a breakdown:

Payment to Farm ($8.50/lb hanging weight) + Payment to Butcher ($80 slaughter fee + $0.63/lb process and wrap fee + optional $1.25/lb curing and smoking)

For example, an average Half Hog might cost:

Payment to Farm ($850) + Payment to Butcher ($40 + $40 + $33) = $963 Total
